There are some pictures I took of the mower hooked as well as when I was building the hitch. Notice the plate that runs under the hitch and connects the hitch to the draft rod. In the picture I have not drilled the holes for the pivot bolts. When it was completed there was a bolt in each end of the long plate that allows the entire assembly to pivot back and forth so the horses are always pulling on the draft bar/inner shoe, not the mower frame. As you would imagine there is a little side draft but it is not to bad. I run a short chain ~38" from the snap on the center horses breast strap to the same on the outer horse. This allows that outer horse to aid in reducing the side draft on the pole. I am still using a 5' bar but will be upgrading to a 6' as soon as I am able to find one.

In the "Farm Show Magazine" (newest edition, just got it a couple of nights ago) there is an article of a guy that converted a single horse mower to three abreast minis. He made his own loose hay loader and bought an estate rake out of Northern Tool so he could make 6 or 8 acres of loose hay with his minis.
