Just as a guess, I would say eggs, because after the laying period is over, the hen still has value for a stew pot.

Don't know about 1934, but today egg production would win hands down. Because of the mass slaughter of layers in Iowa and surrounding states due to bird flu last spring, there is a shortage of eggs. Three Amish brother near here each bought 3,000 pullets last spring that have been laying eggs throughout summer. The eggs are being shipped to California where they bring $5 per dozen. They are making a very good profit. The layers will be destroyed before winter sets in and they plan on getting a new batch of pullets next spring if the numbers hold up. I imagine such a quantity of layers would be sold in mass to a feed producer, and that would be the source of additional income.
