We were digging Irish potatoes yesterday and got into a “discussion” on how to store them. One side votes for washing “store clean” and the other for just knocking the dirt off before storing.

They will store longer if they are not washed, let them dry out of the sun and brush excess dirt off.

I usually just knock and brush the dirt off. Anytime I've washed them off, I always seem to have a bunch of places on them that never dried thoroughly.
