I have an old farm book here somewhere that talks about how the peppermint was grown for oil, and the soil was so mucky that the horses had to wear wooden shoes, the equivalent of snow shoes, to keep them out of the mud. After the mint was pressed for the oil, the remainder was used as hay for cattle.
