Why should eggs intended for hatching be gathered frequently during warm weather?

To keep them cool is my guess, but never had any luck at hatching eggs, except the ones I left with the old hen from the beginning.

I sure don't know a lot of chicken raising. Growing up it was the girls job.
However I do remember two things
Granma would send us out to get the eggs and one old hen who was mostly kept around to set on eggs would never give up hers. I learned to leave her be. Eggs were not that high on my priority list.

The 2nd was NEVER shoot a rooster in the hen house with a .410 shotgun for Sunday dinner. Sure didn't have to worry about picky up eggs for a few days.

They will start to develop at temperatures above sixty-eight degrees and the started embryo may be destroyed by later cooling.
