In the United States, what publication is accepted as the authority on breed and variety characteristics of the generally recognized kinds of poultry?

The American Standard Of Perfection.

I believe that would be the "American Standard of Perfection", it is a book that describes the perfect example for each breed, the modern books also have color pictures to go with the description.
